On our farm, care starts from observing the soil, plants and nature from which we receive all the information we need to take sustainable action and understand the true needs of our ecosystem.
To obtain Extra Virgin Olive Oil, we rely on our trusted mills in the area, which are equipped with modern, continuous-cycle equipment that respects hygiene and processing times within 12 to 24 hours of harvesting.
The best time to harvest olives is in the months of October and November, monitoring the change in color of the skin and pulp during the ripening process, that is, when the slightly ripe olives are less than 50 percent on the crown. In this way we obtain the best quality characteristics of the product.

After milling, the oil is filtered so that it maintains its nutritional and organoleptic characteristics over time, stored in specific containers with an inner tube closure to exclude the infiltration of light and air inside that could damage the product, and finally stored in special rooms equipped with constant temperature control.
